Laksa

INGREDIENTS

  • 2 tablespoon oil
  • 2 garlic cloves, crushed
  • 1 spring onion, chopped
  • 2” piece ginger, chopped
  • 2 green chillies, chopped
  • Juice of 1 lemon
  • 100gm prawns
  • ¾ cups coconut milk
  • ½ cup chicken stock
  • 100gm egg noodles
  • Coriander, chopped

DIRECTIONS

  • 1. Heat oil.
  • 2. Add in garlic, green chillies, spring onion and ginger.
  • 3. Add lemon juice, prawns, coconut milk and stock. Simmer.
  • 4. Boil the egg noodles and fold in the laksa sauce, season to taste with salt and pepper.
  • 5. Serve in a bowl topped with coriander.
