Sweet and Sour Chicken

INGREDIENTS

  • Chicken:
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic paste
  • 1/2 kg chicken boneless pieces, cut in chunks
  • Oil, to fry the chicken
  • Batter:
  • 2 tablespoon oil
  • 2 ¼ cups self raising flour
  • 2 tablespoon corn flour
  • ½ teaspoon salt
  • ¼ teaspoon white pepper
  • 1 egg
  • Sauce:
  • 2 tablespoon corn flour
  • 1 ¾ cups water
  • 3/4 cups sugar
  • 1/4 cup vinegar
  • 2 drops of orange food color
  • 1 can pineapple chunks
  • 1 capsicum

DIRECTIONS

  • 1. Marinate chicken with 1 teaspoon salt, 1 teaspoon pepper & 1 teaspoon garlic paste.
  • 2. To make the batter, combine flour, corn flour, oil, salt, white pepper and egg. Add 1 cup water gradually to make a thick batter.
  • 3. Add in the chicken pieces and fry in hot oil till golden.
  • 4. Remove using a slotted spoon and drain on kitchen towel. Set aside.
  • 5. For the sauce, boil 1 1/2 cups water, sugar, vinegar, pineapple syrup, orange color in a pan. Mix corn flour with water and slowly add in the sauce to thicken it. Add capsicum and pineapple chunks and cook for 2-3 minutes till soft.
  • 6. Add the fried chicken pieces in the sweet & sour sauce.
  • 7. Stir through and serve hot.
