Anday Aloo Karahi

INGREDIENTS

  • 6 to 8 Boiled Eggs
  • 1 Onion large, chopped
  • ½ cup Oil
  • 2 Potatoes (peeled, cubed & boiled)
  • 1 teaspoon Ginger Garlic
  • 4 Tomatoes (chopped)
  • 1 ½ teaspoon Salt or leveled
  • 1 teaspoon Fenugreek (Kasuri Methi)
  • ½ teaspoon Chili Powder
  • ½ teaspoon garam masala
  • 1 teaspoon Zeera (roasted & crushed)
  • ½ teaspoon Turmeric (haldi)
  • 1 bunch Coriander Leaves, chopped
  • 6-8 Green Chilies, chopped
  • 1 teaspoon Coriander crushed

DIRECTIONS

  • 1. Heat oil.
  • 2. Add chopped onion, fry till light golden.
  • 3. Add chopped tomatoes with ginger/garlic.
  • 4. Add dry seasoning (masala), salt, chili powder, garam masala, zeera, haldi, stir and cook all these masala.
  • 5. Add potatoes & boiled eggs.
  • 6. Lastly add kasoori meethi and chopped green chilies.
  • 7. Garnish with chopped coriander.

Notes:

urdutehzeb. For a richer flavor, fry the boiled eggs before adding it in the karhai.
