Glazed Vegetables

Lightly sautéed vegetables in a sticky balsamic honey glaze. This is a perfect accompaniment to an English style garlic roast chicken.
- PREP TIME: 10 minutes
- COOK TIME: 10 minutes
- SERVINGS: 4 persons
INGREDIENTS
- 2 tablespoon butter
- 1 tablespoon thyme (if fresh isn’t available then use 1 teaspoon dried)
- 1 zucchini, sliced
- 3 carrots, sliced
- 6-8 baby corn, halved
- 3-4 mushrooms, sliced
- ¼ cup honey
- Salt and crushed black pepper
- 1 teaspoon Balsamic vinegar
DIRECTIONS
- 1. Heat butter on low flame till melted.
- 2. Add thyme, salt & pepper. Saute for 30 seconds.
- 3. Add the vegetables & honey.
- 4. Cook on simmer till honey has thickened and vegetables are coated properly.
- 5. Garnish with chopped thyme and serve with chicken.
