Lightly sautéed vegetables in a sticky balsamic honey glaze. This is a perfect accompaniment to an English style garlic roast chicken.

Glazed Vegetables

INGREDIENTS

  • 2 tablespoon butter
  • 1 tablespoon thyme (if fresh isn’t available then use 1 teaspoon dried)
  • 1 zucchini, sliced
  • 3 carrots, sliced
  • 6-8 baby corn, halved
  • 3-4 mushrooms, sliced
  • ¼ cup honey
  • Salt and crushed black pepper
  • 1 teaspoon Balsamic vinegar

DIRECTIONS

  • 1. Heat butter on low flame till melted.
  • 2. Add thyme, salt & pepper. Saute for 30 seconds.
  • 3. Add the vegetables & honey.
  • 4. Cook on simmer till honey has thickened and vegetables are coated properly.
  • 5. Garnish with chopped thyme and serve with chicken.
