Mint leaves add both freshness and texture to this salad.

INGREDIENTS
- Garlic 2 cloves
- Salt 1 teaspoon
- Olive Oil 1 tablespoon
- Black Pepper ½ teaspoon
- Lemon juice 4 tablespoon
- Sweet Corn – 1 tin
- Cucumber, finely chopped 1
- Boiled Potato, cubed 1
- Tomato, Finely chopped 1
- Mint Leaves 2 tablespoon
DIRECTIONS
- 1. Make the salad dressing by blending garlic cloves, black pepper, lemon juice and olive oil. Blend till smooth. Taste & adjust seasonings if required.
- 2. Put sweet corn, cucumber, chopped potato, tomato and mint leaves.
- 3. Pour dressing over top and then toss with a fork.
- 4. Leave to marinate for 10 – 15 minutes then serve.
