Corn and Mint Salad

INGREDIENTS

  • Garlic 2 cloves
  • Salt 1 teaspoon
  • Olive Oil 1 tablespoon
  • Black Pepper ½ teaspoon
  • Lemon juice 4 tablespoon
  • Sweet Corn – 1 tin
  • Cucumber, finely chopped 1
  • Boiled Potato, cubed 1
  • Tomato, Finely chopped 1
  • Mint Leaves 2 tablespoon

DIRECTIONS

  • 1. Make the salad dressing by blending garlic cloves, black pepper, lemon juice and olive oil. Blend till smooth. Taste & adjust seasonings if required.
  • 2. Put sweet corn, cucumber, chopped potato, tomato and mint leaves.
  • 3. Pour dressing over top and then toss with a fork.
  • 4. Leave to marinate for 10 – 15 minutes then serve.
