Arizona Grill's Chicken Steak with Mushroom Sauce

INGREDIENTS

  • For Chicken Steak
  • 2 Chicken Breasts
  • ½ teaspoon crushed garlic
  • 1 tablespoon chili sauce
  • 1 teaspoon soya sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon H.P Sauce
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried rosemary
  • 2 tablespoons oil
  • For Caramelized Onions:
  • 2 tablespoon oil
  • 2 medium onions, sliced
  • 1 teaspoon soya sauce
  • 1 teaspoon HP / BBQ sauce
  • Pinch of salt
  • 1 teaspoon brown sugar
  • For Mushroom Sauce:
  • 1 tablespoon butter
  • 2-3 mushrooms, sliced
  • 2 tablespoon flour
  • ½ cup chicken stock or water
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon mustard paste
  • 1 tablespoon HP sauce
  • ½ cup milk
  • 2 tablespoon cream
  • 1 tablespoon cheese
  • For Mashed Potatoes:
  • 2 large potatoes, peeled and cut in quarters
  • ¼ cup milk
  • 2 tablespoon cream
  • 1 tablespoon butter
  • Salt & Pepper – to taste

DIRECTIONS

  • 1. For Chicken Steak:
  • 2. Marinate chicken with garlic, chili sauce, soya sauce, worcestershire sauce, HP sauce, salt, black pepper and dried rosemary. Leave to marinate for at least 30 minutes – 45 minutes. Heat butter or oil. Once the butter is hot, add chicken / beef and grill for 2-3 minutes on each side.
  • 3. Remove the steaks. Serve with mashed potatoes, mushroom sauce and caramelized onions.
  • 4. For Caramelized Onions:
  • 5. Heat oil on low heat. Add onions with soya sauce, HP sauce, salt and brown sugar.
  • 6. Cook for about 5-10 minutes till caramelized. Make sure you keep on stirring so the onions don’t burn.
  • 7. For Mushroom Sauce:
  • 8. Heat butter in a small pan. Add mushrooms and saute for a minute. Add flour and saute for about a minute to remove the raw flavor. Add stock / water and whisk to remove lumps.
  • 9. Season with salt, pepper, mustard paste, HP sauce.
  • 10. Then add milk, cream and cheese. Cook till thick and keep whisking to ensure there are no lumps.
  • 11. For Mashed Potatoes:
  • 12. Boil the potatoes in salted water till tender. Drain.
  • 13. Mash the potatoes.
  • 14. Heat a sauce pan. Add mashed potatoes with milk, cream, butter and season with salt & pepper. Cook till creamy & hot. Add a bit more milk if they are too thick.

Notes:

This recipe can also be made in beef. Take 8 ounce beef undercut and increase the cooking time accordingly.
