INGREDIENTS
- 2 tablespoon oil
- 2 garlic cloves, crushed
- 1 spring onion, chopped
- 2” piece ginger, chopped
- 2 green chillies, chopped
- Juice of 1 lemon
- 100gm prawns
- ¾ cups coconut milk
- ½ cup chicken stock
- 100gm egg noodles
- Coriander, chopped
DIRECTIONS
- 1. Heat oil.
- 2. Add in garlic, green chillies, spring onion and ginger.
- 3. Add lemon juice, prawns, coconut milk and stock. Simmer.
- 4. Boil the egg noodles and fold in the laksa sauce, season to taste with salt and pepper.
- 5. Serve in a bowl topped with coriander.
