INGREDIENTS
- Chicken:
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic paste
- 1/2 kg chicken boneless pieces, cut in chunks
- Oil, to fry the chicken
- Batter:
- 2 tablespoon oil
- 2 ¼ cups self raising flour
- 2 tablespoon corn flour
- ½ teaspoon salt
- ¼ teaspoon white pepper
- 1 egg
- Sauce:
- 2 tablespoon corn flour
- 1 ¾ cups water
- 3/4 cups sugar
- 1/4 cup vinegar
- 2 drops of orange food color
- 1 can pineapple chunks
- 1 capsicum
DIRECTIONS
- 1. Marinate chicken with 1 teaspoon salt, 1 teaspoon pepper & 1 teaspoon garlic paste.
- 2. To make the batter, combine flour, corn flour, oil, salt, white pepper and egg. Add 1 cup water gradually to make a thick batter.
- 3. Add in the chicken pieces and fry in hot oil till golden.
- 4. Remove using a slotted spoon and drain on kitchen towel. Set aside.
- 5. For the sauce, boil 1 1/2 cups water, sugar, vinegar, pineapple syrup, orange color in a pan. Mix corn flour with water and slowly add in the sauce to thicken it. Add capsicum and pineapple chunks and cook for 2-3 minutes till soft.
- 6. Add the fried chicken pieces in the sweet & sour sauce.
- 7. Stir through and serve hot.
