We love this creamy russian salad! It's got vegetables, a bit of pasta and fruits to give it a tangy sweet flavor.

Russian Salad

INGREDIENTS

  • 2 potatoes; peeled, boiled and cubed
  • 1 cup peas, cooked
  • 2 carrots, cubed
  • 1 apple, cubed
  • ½ cup boiled macaroni or pasta
  • ½ cup pineapple in cubes
  • ½ cup chicken, cut into cubes (optional)
  • 2 tablespoons lemon juice
  • 4 tablespoons mayonnaise
  • 8 tablespoons cream
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon sugar (adjust to taste)

DIRECTIONS

  • 1. Boil potatoes and peas. Set aside.
  • 2. Take a large bowl and add potatoes, peas, carrots, apples, pasta and pineapple. Add chicken if using.
  • 3. Whisk lemon juice, mayonnaise, cream, sugar, salt & pepper together.
  • 4. Add the cream mixture to the fruits & vegetables.
  • 5. Stir together.
  • 6. Serve cold
