We love this creamy russian salad! It's got vegetables, a bit of pasta and fruits to give it a tangy sweet flavor.
- PREP TIME: 30 minutes
- COOK TIME: 5 minutes
- SERVINGS: 4 persons
INGREDIENTS
- 2 potatoes; peeled, boiled and cubed
- 1 cup peas, cooked
- 2 carrots, cubed
- 1 apple, cubed
- ½ cup boiled macaroni or pasta
- ½ cup pineapple in cubes
- ½ cup chicken, cut into cubes (optional)
- 2 tablespoons lemon juice
- 4 tablespoons mayonnaise
- 8 tablespoons cream
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon sugar (adjust to taste)
DIRECTIONS
- 1. Boil potatoes and peas. Set aside.
- 2. Take a large bowl and add potatoes, peas, carrots, apples, pasta and pineapple. Add chicken if using.
- 3. Whisk lemon juice, mayonnaise, cream, sugar, salt & pepper together.
- 4. Add the cream mixture to the fruits & vegetables.
- 5. Stir together.
- 6. Serve cold
