This delicious paneer tikka masala is an ideal example of how vegetarian food is both healthy & tasty. Serve with plain rice or naan.

Paneer Tikka Masala

INGREDIENTS

  • For the marination:
  • 200gm Paneer (cottage cheese)
  • 1/2 cup thick yoghurt / greek yoghurt / hung curd
  • 1 teaspoon red chilli powder
  • salt to taste
  • 1 teaspoon fenugreek leaves (kasuri methi)
  • 1 tablespoon ginger garlic paste
  • Juice of half a lime
  • 1/2 teaspoon garam masala
  • 2 tablespoon mustard oil (sarsoon ka tail)
  • 1 large onion, diced
  • 1 tomato, diced and deseeded
  • 1/2 cubed capsicum
  • For the gravy:
  • 2-3 tablespoon cooking oil
  • 1teaspoon cumin seeds
  • 2 large chopped onions
  • 2 large chopped tomatoes
  • 2 tablespoon garlic ginger paste
  • 1 1/2 teaspoon chilli powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/4 turmeric powder
  • salt to taste
  • 2 green chilies slit length wise
  • 2 cups cashewnut paste
  • 1 cup water
  • 1/2 cup fresh cream

DIRECTIONS

  • 1. Take a large bowl and add 1/2 cup thick yoghurt / hung curd to it.
  • 2. To the yoghurt add red chilli powder, salt, kasuri methi, ginger garlic paste, lime juice, garam masala and oil. Mix well.
  • 3. Now add the cubed tomato,capsicum and onion to the yoghurt mixture and stir well to coat all the vegetables with the marination.
  • 4. Cut the cottage cheese in large cubes and put it in the bowl with the Curd. Gently coat the cottage Cheese with the marination.
  • 5. Keep it aside to marinate for half an hour.
  • 6. After around 30 minutes put alternate pieces of the Paneer and the vegetables on skewers.
  • 7. Heat a flat nonstick pan and brush it with oil.
  • 8. Put the skewers in the hot pan and let them get a nice golden brown color on all sides. Keep brushing the Paneer and the vegetables with oil.
  • 9. Once cooked remove the cottage cheese and the vegetables from the skewers and keep them aside for the gravy.
  • 10. Preparation of the gravy:
  • 11. Heat 2 tablespoon oil in a pan.
  • 12. When hot add in the cumin seeds and let them splatter.
  • 13. Add finely chopped onions and sauté till golden brown.
  • 14. Add the ginger garlic paste and sauté for a minute.
  • 15. Mix in the finely chopped tomatoes and cook for 2 minutes.
  • 16. Add chilli powder, coriander powder, garam masala, turmeric powder, salt, slit green chilies and cook till all the spices are cooked.
  • 17. Add in the cashewnut paste and keep stirring till the mixture starts releasing oil. Add a cup of water to increase the bulk of the gravy.
  • 18. Add 1/2 cup of fresh cream and give it all a good mix.
  • 19. Add in the golden brown Paneer tikka to the gravy. Add 1/2 teaspoon garam masala and 1/2 teaspoon kasuri methi.
  • 20. Add half a juice of lime. Give it all a gentle stir.
  • 21. Garnish with fresh coriander. Serve hot.
