Chicken Tikka by Madiha Salam

INGREDIENTS

  • Chicken Tikka Masala (Take 2 parts whole red chili, 1 part cumin seeds and 1 part coriander seeds; toast & ground) – 1 table spoon
  • Chicken , tikka cut - 4 pieces
  • Salt – to taste
  • Turmeric powder – ½ teaspoon
  • Red chilli powder – 1 teaspoon
  • Yogurt –½ cup
  • Lemon juice – 2 tablespoon
  • Orange color – pinch
  • For Raita
  • Dried ginger powder (saunth powder) – 2 teaspoons
  • Yogurt – 1 cup
  • Chicken tikka masala – 1 tablespoon
  • Tamarind paste – 2 tablespoons
  • Sugar – ½ teaspoon
  • For Imli Chatni
  • Tamarind pulp – ½ cup
  • Sugar – ¼ cup
  • Salt – to taste
  • Red chilli powder – 1 tablespoon
  • Cumin seeds – 1 teaspoon
  • Chat masala – 1 tablespoon

DIRECTIONS

  • 1. Make the chicken tikka masala by toasting and grinding spices. Take one part cumin seeds, coriander seeds and 2 parts whole red chili. Store in an air-tight container and use as needed.
  • 2. Make slits in the chicken so that the marinade can penetrate well.
  • 3. Marinate the chicken with salt, turmeric powder, red chili powder, yoghurt, lemon juice, orange color and a tablespoon of the already prepared chicken tikka masala.
  • 4. Marinate for at least 4 hours.
  • 5. Smoke the coals and cook chicken on the BBQ grill until tender.
  • 6. Take a bowl and add yoghurt. Add dried ginger powder (saunth powder), 1 tablespoon chicken tikka masala, tamarind paste & sugar. Mix well to make raita.
  • 7. To make the chatni put tamarind pulp to boil in a small sauce-pan. Add sugar, salt, red chili powder, cumin seeds and chaat masala. Cook till thickened.
  • 8. Take off heat and serve at room temperature.
