This Greek salad is a light & healthy start to your meal.

Greek Salad

INGREDIENTS

  • 2 tablespoon olive oil
  • 4-6 basil leaves, chopped
  • 8-10 mint leaves, chopped
  • ½ - 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 capsicum, chopped
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 4-6 black olives, pitted
  • 4-6 green olives
  • 1 cucumber, chopped
  • Iceberg lettuce (a bunch)
  • Feta cheese, as required

DIRECTIONS

  • 1. For the dressing, mix basil and mint leaves with olive oil. Season with salt & pepper. Mix well and set aside to let flavors infuse.
  • 2. In a bowl mix capsicum, tomatoes, onion, olives & cucumber.
  • 3. Take a salad bowl and layer iceberg lettuce on the bottom. Top with other vegetables.
  • 4. Drizzle about 1/4th cup of dressing over salad and toss lightly.
  • 5. Top with feta cheese.
