Roasted on a bed of vegetables, this baked fish makes for a simple on dish meal with minimal cleaning. Serve with garlic bread or steamed rice.

Baked Fish


  • ½ kg potatoes, halved
  • 200gm tomatoes, halved
  • Olive oil, to drizzle
  • 4 fish fillets
  • Juice of 1 lemon
  • 1 lemon, sliced
  • 4-6 capers
  • 200gm mayonnaise
  • Parsley, chopped
  • Salt and black pepper to taste


  • 1. In a baking dish place slices of tomatoes, potatoes, drizzle with olive oil, season with salt and pepper.
  • 2. Roast for 20 minutes and then add the fish, top with lemon slices and a few capers, bake till fish is done.
  • 3. Mix mayonnaise with parsley, lemon juice and remaining capers in a bowl and season with salt and pepper.
  • 4. Serve with fish.
